Lunchtime Poll: Soup Weather



Since I live in the Northeast, I can’t help but have weather on my mind. It’s cold and windy and gloomy and grey. Perfect weather for a a big ol’ pot of soup!

And since it’s lunchtime, I can’t help but wonder, what is your favorite fall/winter soup?

I kind of love it all. With the exceptions of pea and ham & bean. I can’t get on board with either of those.

    Broccoli cheddar all the way. And it’s so so so easy now that I have a decent immersion blender.

    Oh man, soup is the winter food of the gods along with fresh baked bread. Yum. I make a lot of potato soups, minestrone, broccoli cheese soup, tortilla soup, stews, the whole lot. I do tend to stay away from cream based soups (like the chowders) because I can’t see what’s in them, and that freaks me out on a little bit, but they always smell good. Oh! My favorite, how could I forget? I love beer cheese soup. It’s the super best.

        I found this recipe in a Crock-Pot cookbook, so the temperatures are a little up in the air because using a slow cooker isn’t ideal for melting cheese into liquids- makes it all grainy.

        14oz chicken broth
        1 cup beer (but I usually use the whole bottle)
        1/4 cup finely chopped onions
        2 cloves minced garlic
        3/4 tsp dried thyme
        6oz American cheese
        6 oz sharp cheddar cheese
        1 cup milk
        1/2 tsp paprika

        Simmer broth, beer, onions, garlic, and thyme for 30 minutes.

        Turn the temp down a bit and add the milk, cheese, and paprika. Stir until melted and then let cook for another 10-20 minutes.

        I like to serve it with rye bread or in a bread bowl.

        Also as for beers, I tend to use Newcastle Brown Ale. It gives it a really good flavor. The recipe calls for light beers because “hearty ales have a stronger flavor that might not please your family’s taste buds.” I always giggle at that, but that might just be me.

    I’m not a big fan of tomato except when it’s soup. Preferably a thick, creamy one with Italian spices and ciabatta + Italian cheese on the side. People who think soup isn’t filling enough for dinner clearly never met the right soup.

    I’m not a big soup eater. I should work on that, especially since soup is so easy to make from scratch. I do have a pan of chicken bones and leavings ready to make some stock, I just need to get off my hiney and do it.

    SO many good soups! I think I tend to make a lot of potato and leek soup during the course of the winter. Maybe it’s because it’s just so rich and simple, or because potatoes are cheap and plentiful, or because it makes the perfect base to add many many other possible things to it later.

    Other soup favorites: hearty lentil and veggies; portugese sausage and kale; minnestrone; creamy squash or pumpkin.
    All of these homemade, of course. Crock-Pots are full of awesome.

    I love soups. Particularly cream based ones. New England clam chowder, cheese and whatever, cream of a vegetable, it’s all good.

    ALL of the soup. Get ALL of it in mah belleh.

    Especially chicken-veggie and chilis. They are my favorites. And potato soups. And all of them.

    I need to get caught up on my NaNoing…I got distracted by the election and scrambling to figure out how I can pay rent this month (I’m only $50 short now, gah!). I’ve been stressed. But thanks to a very generous friend (she brought me the results of a pantry cleanout) I can MAKE soup! Woohoo!
