Banana Muffins!

My darling Juniper Junior was desperate to bake and I had bananas in desperate need of being used. And so I found myself in the sweltering 21°C heat with the tumble dryer tumbling and the oven on, too, just for good measure. To say the least, it’s hot in here.

A quick hop, skip and a jump around the Internet turned up many, many recipes for banana muffins and many repeats of those recipes, too. So I picked one, wrote down the basics and set off to make banana muffins. Aprons on, ingredients being measured, I started adapting bits of the recipe here and there. So here it is, our recipe for banana muffins:

Ingredients:

  • 75 grams butter
  • 200 grams self-raising flour
  • 75 grams oats
  • 2 teaspoons baking powder
  • 1 heaped teaspoon mixed spices
  • 100 grams caster sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon honey
  • 3 bananas
  • 2 eggs
  • 150 ml milk

Method:

  • Pre-heat the oven to 180°C (for a fan oven).
  • Melt the butter in a pan along with the honey.
  • Mix the flour, oats, baking powder, spices and sugar all together.
  • Blend the bananas and milk together in a blender.
  • Mix the eggs and vanilla together and add the (somewhat cooled) butter and honey mixture.
  • Add the blended banana and milk to the wet ingredients.
  • Pour the wet ingredients into the bowl with the dry ingredients.
  • Mix well.
  • Pop the mix into muffin cases (I got 12 good sized muffins out of this mix).
  • Cook for 25 minutes.
  • Allow to cool.
