I love to make elaborate, flavorful meals that warm the belly and the soul, but usually I wait way too long to do that and just want to eat something immediately. My go-to in these situations is typically grilled cheese or a poached egg on toast with chopped avocado. The other day, I put two slices of cheese between two slices of bread and put it in the toaster oven, flipping it over halfway through and brushing the sides with leftover garlic butter from last week’s pizza order just before eating. It’s moments like these that I know my mother is proud she raised a mature, responsible adult who can take care of herself.
