Last year, when we were on Weight Watchers, the Mister and I discovered that it is possible to make a delicious dessert that is 100% fat-free. Not only that, but it is so good that your guests won’t feel like they are being punished by your desire to lose weight. And, like all my favorite recipes, it can be made in less than half an hour.
I don’t know what its official name is, I can’t find the original recipe and I’ve changed it a bit anyway. We just call it Weight Watchers Cake.
You will need:
1 Angel Food Cake
1 Package of Cool Whip Free
Some sort of flavoring like Kool-Aid, Jell-O or pudding (unprepared)
About a pound of fruit
*Optional – 10 oz Greek yogurt (give or take)
Mix the Cool Whip with your flavoring of choice. Mix the powder in gradually and taste as you go, some flavors (like Kool-Aid lemonade) are much stronger than others so you’ll need less.
Cut the angel food cake into three layers.
Wash and prepare your fruit.
Layer cake, (yogurt), Cool Whip, and fruit three times.
Chill and serve.
One of the best things about this dessert is seemingly endless number of combinations. I don’t know how many times we had this last summer, but I do know we never had the same mix of flavors twice. My friend Rebecca came up with the strawberry Jell-O and blueberries combo for Independence Day which was both tasty and prettily patriotic since it came out red, white and blue (ish). My favorite mix, which I recreated for the photo, was peach Jell-O, strawberries and vanilla yogurt. It’s like a giant bowl full of creamy, fruity goodness. My strawberry lemonade birthday cake, also courtesy of Rebecca, was darn good too.
Whatever flavors you pick, you will end up with a light, refreshing dessert suitable for any summer entertainment.
