Lazy Recipe: Mozzarella and Tomato Salad

This is another one of my cherished Lazy Recipes, and I’m happy to share it with you all even though you’ve probably made some variation of it on your own by now. It’s basically my own take on something my mom makes all the time. This works better with fresh mozzarella, but the store-bought block variety works just fine as well. The basil, however, must be fresh.

There’s really not much else to say, here, since it’s such a ridiculously easy recipe. This makes a great side dish or a snack. Keep in mind the measurements are all approximate; I usually just try to have an equal amount of cheese and tomato in there, and the oil-to-vinegar ratio is about 3:1.

Mozzarella & Tomato Salad

8 oz. whole cherry tomatoes
8 oz. fresh or processed mozzarella, cut into 1-inch cubes
1 tablespoon olive oil
¼ tablespoon balsamic vinaigrette
¼ cup fresh basil
Salt and pepper to taste

Mix them up in a bowl and then eat them.

This is delicious. For parties, I like to layer the slices–one mozz, one tomato, a basil leaf, repeat, on a plate in rows so it looks decorative and pretty. You definitely need the fresh mozz, and of course regular-sized tomatoes to make it work. Fresh basil also adds a crisp, fragrant flavor.

Man, this is a staple in my house! But instead of turning it into a salad (which I must try), we slice roma tomatoes and the mozzarella and place it all on slices of baguette before dousing with the balsamic vinegar mix. I think this is probably on my list of top 5 flavor combinations.
