Strawberry Sprite Cake

Make this cake when people are over, and they will be amazed you are using Sprite… (unless you are from the Midwest and then they think “where have you been, under a rock or something? This is not new!”)

Cake

1 box Betty Crocker SuperMoist cake mix – yellow
1 1/2 cup diced fresh strawberries
12 oz can of Diet Sprite ( or some other low cal lemony-limey carbinated sody pop)

Topping

1/2 cup pureed strawberries
1 tub fat free cool whip
Cooking spray
Preheat oven to 350°
Spray the pans – whatever kind you want. I used Pampered Chef Minimuffin tin twice. It’s a cake mix; look at the box and figure it out.
  1. Pour can of soda into a mixing bowl.
  2. Empty cake mix into another bowl and whisk it to get lumps out (there are always lumps!).
  3. Pour cake mix slowly into soda slowly while gently whisking.  (DO NOT POUR SODA INTO CAKE MIX, the world will end, trust me. I wouldn’t lie about something as important as cake.)
  4. When mix is all wet  (technical but unsavory term: moist), fold in the diced strawberries.
  5. Pour the mix into the pan/muffin tin/glass container.  The cake is not going to rise like a normal cake so you can put a little more in the pan and it is going to be OK.
  6. Your baking time will depend on your oven and chosen vessel; bake until the middle is no longer jiggly and the top of it is getting golden brown.
While your cake is cooking, do the dishes or make the topping. (Dipping leftover strawberries in the cake batter bowl before you wash it is optional, but recommended.)
Whiz up some strawberries in a food processor, or chop them super small and smash them a little in a bowl to get a little juice out of them.
Mix with the entire tub of Cool Whip.
When the cake is completely cooled, frost it however you want.
I don’t have a calorie count or amount of fat handy, but you can read; look at the packages!
I joined Weight Watchers 5 weeks ago.  I heard about this, and thought it would be a good math and food experiment.
Here are the stats for the Points Plus program for this exciting tasty little project:
Cake mix is 12 servings of 4 points each, or 48 points.
Strawberries and soda are free
Fat free Cool Whip is 0 points for 2 tbsp of topping, 4 tbsp is 1 point.
I made 48 mini muffins and topped it with 1 tbsp of cool whip.  They were little pieces of 1 point heaven.  I ate 10 of them at a sitting, but whatever!  I completed my goal of making a low fat, tasty treat for not too many points.
It was easy and every lady in my WW meeting was kind of having some private moments with these baby cakes.
