Last night I made breakfast for dinner, and it was divine. I tried to copy an omelet I had on New Year’s Day, and while it wasn’t the same, it was damn good and really filling.

I added ham, onion, mozzarella cheese and avocado to my omelet. The New Year’s Day omelet had smoked Gouda, bacon, green onion and avocado, so it was remarkably similar. So today I ask you – what do you like in your omelet?

I like variety, but once I had a REALLY DELICIOUS one with like smoked salmon, cream cheese, and dill. That was fabulous. Also I usually like mushrooms and avocados in mine. Or I just want an eggs benedict or something instead. Haha.
tomatoes, onions, peppers and light on the cheddar. Spinach is good too. Maybe a little ground beef if someone else was making it for me (I don’t eat pork, so most of the time, meaty omelettes are out for me if I’m in a restaurant.)
ETA: Or broccoli in place of spinach!
My current favorite is cooked spinach, onion, and peppers with sharp cheddar. I’ve been making pizzas with those toppings and I always save some for an omlette the next morning. When I’m in a rush, any combination of tomatoes, onion, and cheese.
I’ve had one at a local place that was egg whites with spinach and feta inside and a salsa on top and it was delicious.
I love simple omelettes, so if I add anything at all, it’ll be some scrummy cheese and a dash of pepper. However, if I have some in the fridge, i’ve often added a spoonful or two of tattie salad to an omelette. The end result is a gorgeous big meal.
I’m not a huge fan of omelets, or scrambled-y eggs in general. I’ll have a cheddar broccoli or mushroom swiss in a pinch, but I prefer my eggs over easy with toast for dipping. OH! Or toad in the hole, where there’s the over easy egg in a hole in the middle of a piece of toast, with a slice of cheese melted on top. OM NOM NOM.
I’m simple, I like either ham and cheese or bacon and cheese. I don’t even really care what kind of cheese it is, just so long as the omelet is cooked hard enough that things aren’t runny.
