I LOVE peanut butter cookies for two reasons. First, they are delicious. And second, I always have the ingredients in my house (what can I say? I love PB&Js).This recipe is from the timelessly perfect Joy of Cooking, and it’s super easy to execute and remember. You’ll have it memorized in no time.
I will add that I use natural peanut butter and it turns out just fine. I make the cookies slightly larger than the recipe calls for – maybe 1.25-inch balls rather than 1 inch – and they, too, turn out great. So have fun with that one.
Peanut Butter Cookies
Preheat the oven to 375°F. Grease or line two cookie sheets.
Whisk together:
1 ½ cups all-purpose flour
½ teaspoon baking soda
Beat in a large bowl until well blended:
1/3 cup unsalted butter, softened
½ cup sugar
½ cup packed brown sugar
Beat in:
1 large egg
1 cup peanut butter
½ teaspoon vanilla
Stir in the flour mixture until well blended. Shape into 1-inch (or larger!) balls and arrange about 2 inches apart on the cookie sheets. Press flat with a fork. Bake, 1 sheet at a time, about 10 to 12 minutes. Let stand briefly, then remove to a rack to cool.

Oh, sweet sweet memories. My mother used to bake peanut butter cookies until we stuck a ‘O No The Calories’ rut (she still refuses to bake carrot cake, for gods sake!) but I guess the Peanut Butter Cookie Legacy will have to continue with me.
I also make peanut butter chocolate chip cookies. I LOVE peanut butter.
Now I want peanut butter cookies, maybe with chocolate chips and a little oatmeal mixed in…. MMmmmm…..
The back of kraft peanut butter has a flourless peanut butter cookie recipe. It’s great because my grandma is celiac and this means she makes them all the time and I can eat them when I visit. It is a good day in my life when there are peanut butter cookies. YUM!
Now I want a cookie and I can’t have one :(
