Get in My Belleh: Frenchwoman’s Chicken Salad

Hi! I’m not much of a cook, so I rely a lot on salads for something quick, yummy, and nutritious. But we all need protein, and from what I hear, some of us are very grossed out by the mayonnaise-based chicken and tuna salads that go on sandwiches. Never fear! I have the answer here!

This recipe is taken from The Frenchwomen Don’t Get Fat Cookbook, which is very near and dear to my heart because it’s the first real cookbook I’ve ever owned. However, being that the whole Frenchwomen Don’t Get Fat franchise is basically a weight-loss regimen and we believe in acceptance of all body types here at PMag, we’re just going to call it Frenchwoman’s Chicken Salad and be done with it. Mireille Guiliano will most likely be staring at us like Ana’s subconscious stares scolding over her half-moon glasses, but that’s okay.

Ingredients:

  • Roasted chicken breast, 4 oz, chopped into small pieces

    Bowl of chicken salad with chopped red peppers
    Chicken salad, only with red peppers added as well.
  • 2 teaspoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped red onion
  • 1 small stalk celery, chopped
  • 1 teaspoon capers
  • Salt and pepper, to taste
Yield: 2 Servings
In a small bowl, mix the mayonnaise, mustard, red onion, celery, and capers. Add chicken and mix thoroughly. Salt and pepper to taste.
So see? It’s very easy and quick! And you’re thinning out and adding more taste to the mayonnaise with the Dijon mustard. Now you can pretend you’re as much a wizard in the kitchen as the Swedish chef. C’est magnifique!

Oh, no, Swedish Chef, no! The recipe doesn’t call for a chicken that fresh! And we can’t cook Camilla, we just can’t!
