Whoopie Pies from a box?

If you look up the definition of “impulse shopper” in the dictionary, I’m pretty sure you’ll see my portrait. I’m such a sucker for those pretty endcap displays. Yesterday, my tendency to try just about anything that’s reasonably priced and displayed prominently at the end of the aisle lead me to this purchase:

Whoopie Do! box.
I also love punny product names.

I mean, how could you not buy this? Punny name, weird mascot, and they’re freakin’ whoopie pies! For those of you not familiar with whoopie pies, they are a delicacy native to Pennsylvania and other places with large Amish/Mennonite populations. It’s basically a sandwich of two small chocolate cakes with a creamy icing filling. Fresh ones tend to have a whipped cream icing filling and are a special kind of delicious.

I am weeks away from the local fair that allows me to purchase these little heavenly sammiches, so I figured it was worth the three bucks to try this mix out.

Four ingredients. Seems easy enough.

One bag of cake mix, add one egg and a tablespoon of vegetable oil. Mix until smooth. Spoon onto greased or parchment-lined cookie sheet. Bake at 350°F for 10-12 minutes. Let cool, about 10-15 minutes. Squeeze the icing on half of the cakes, and sandwich those puppies up.

Finished product!

The verdict:

While these aren’t as magical as the ones that you get at the country markets, they were pretty damn good. The box made six decent-sized pies, and there are currently two left. I’m pretty sure they won’t last the night, as Mr. qSS has a bit of a sweet tooth, and a habit of midnight cookies and milk. Plus, they took really minimal effort and time (about a half hour, including cooling time). This was definitely one of my wiser impulse buys.

What’s the difference between this type of cake mix and a regular cake mix? I mean couldn’t you use any cake mix to make woopie pies? Just curious. My old bakery did woopie pies, but instead of whipped cream in the middle they used butter cream, yum! Now if only I could bake.
