I’m pretty sure there’s no such thing as a bad grilled cheese, but I want to know what makes one totally awesome.
My everyday grilled cheese is just sharp cheddar on honey wheat bread, but I love diner grilled cheeses with bacon and crappy American cheese, and using challah bread makes them absolutely sublime. When I was a kid, I was all about the Velveeta on white bread with a layer of plain Doritos added for some crunch.

Oh my gosh, my cafeteria serves grilled cheese on request and if I don’t watch myself, I’ll eat one every day and nothing else of nutritious form. American singles and white bread, excellent grilled so the cheese is nice and gooey. Just had it for dinner, sigh.
Half provolone and half sharp cheddar on 13 grain wheat bread with a side of pickle spears or tomato soup depending on the season.
How did I forget about provolone on multigrain bread? And how did I never think to add cheddar to the mix? I will have to try this and report back.

Favorite grilled cheese? Probably herb cream cheese, some Old Amsterdam or similar and sweet red onions.
There’s a phenomenal grilled cheese place in my neighborhood (that also serves cheap drinks and fried pickles. Hi, I’m in love). I’ve had some excellent grilled cheeses with ham, chicken fingers and bacon, among other things. Good God, my mouth is watering right now.

And if you like your bread crispy, you have to use mayo. It just fries the hell out of the bread without burning it. It may sound crazy, but it is so, so good.
Oh the humble grilled cheese! Near where I used to live, we had a restaurant with the claim to fame that they made Oprah’s favorite grilled cheese. The secret was a bit of honey with the cheddar and some tomato. It was pretty good.
I’m a quesadilla girl, my self, and like cooking some good cheese in between two corn tortillas in plenty of olive oil. It gets crispy and delicious. It’s one of my ultimate comfort foods.

When I worked at a Christian summer camp one year, I was assigned to the kitchen and we had the same menu every week and Wednesday lunch was grilled cheese. Basically they took pure melted butter and brushed it over the bread and cooked it on those huge skillets and oh my god it was so good. I would just grab a huge plate and eat it all.
