This Open Thread is Talking About Lunch

Because I have been spending way too much money on food that is mediocre (at best), I made a giant batch of pasta salad to take to work this week.

Couscous, kale, shredded carrot, cucumber, yellow and green bell peppers, lemon juice, and feta cheese. Oh, and my magic ingredient — Good Seasons dressing mix. I am so excited for lunch this week. No more sub-par $9 lunches! I can laugh alone in my office with my salad, like these women.

How is everyone’s week going so far? Anything to write home about?

I made a really good pasta salad that I took camping.

Spaghetti noodles (the kind made from a veggie base, so they are healthier than reg. ones), cooked and cooled.

Then: kale, white beans, shredded carrots, cucumbers, green onions, all tossed together with a balsamic vinaigrette. It was really, really good.

People I went camping with were like, “Thanks for bringing something with actual nutrients!” since the rest of the time it was hot dogs and chips city.
